That’s why I’ve titled this collection « Summer Cold Soups » to celebrate these refreshing recipes.

My little tips for making the perfect cold soups

The secret #1: the temperature

A cold soup needs to be really cold. I recommend preparing it at least 2 hours before serving and letting it rest in the refrigerator. And if you’re in a rush (it happens!), you can toss some ice cubes directly into the bowl while blending. This lazy tip is 100% approved! 😉

It took me some time to realize this: cold temperatures can dull flavors. What tastes perfectly seasoned at room temperature may taste bland once chilled. So don’t hesitate to taste and adjust the salt, pepper, vinegar, or lemon just before serving.
