This year, I’m diving into a subject that’s close to my heart: cold soups! When the temperature soars and just the thought of turning on the oven feels daunting, these delightful dishes become my best allies. They’re easy, quick, ultra-fresh, and above all, delicious! That’s why I’ve titled this collection « Summer Cold Soups » to celebrate these refreshing recipes.

Honestly, if I had to give you just one reason, it would be this: they’re ready in a mere 10 minutes. Yes, you read that right. You peel, you blend, you chill, and voilà! No cooking, no supervision, and no pile of dirty dishes. It’s a dream when it’s 95°F (35°C) outside!
But that’s not all. Cold soups are also:
- Super healthy: made solely from raw vegetables, preserving all those vital vitamins
- Very light: perfect for when the heat dampens your appetite
- Economic: make the most of seasonal vegetables at low prices (or from your garden if you’re fortunate enough to have one!)

My little tips for making the perfect cold soups
The secret #1: the temperature
A cold soup needs to be really cold. I recommend preparing it at least 2 hours before serving and letting it rest in the refrigerator. And if you’re in a rush (it happens!), you can toss some ice cubes directly into the bowl while blending. This lazy tip is 100% approved! 😉
The secret #2: season generously
It took me some time to realize this: cold temperatures can dull flavors. What tastes perfectly seasoned at room temperature may taste bland once chilled. So don’t hesitate to taste and adjust the salt, pepper, vinegar, or lemon just before serving.
The secret #3: pay attention to the garnish
A visually appealing cold soup is also about aesthetics! A sprinkling of fresh herbs, a drizzle of olive oil, diced vegetables, roasted seeds, or a dollop of Greek yogurt can transform a simple bowl into a chef-worthy presentation.
