Healthy Grilled Chicken and Veggie Sandwich Recipe

We often find ourselves in need of easy, nourishing, and healthy recipes. That’s where I come in!! Let me introduce you to my delightful chicken and vegetable sandwich.


The Return of Lunch Boxes

Summer is coming to an end, but the days are still lovely and warm. School (and work!) has started again, which means it’s also time to bring back lunch boxes… Whether it’s for a teen, for yourself at work, for a family picnic, or just for a quick dinner, this chicken and vegetable sandwich recipe will delight you!

The Choice of Ingredients for My Chicken and Vegetable Sandwich

It’s true that sandwiches aren’t always very healthy or balanced, but I think we’re doing quite well here! Just take a look:

  • I chose thick-sliced whole grain bread (I prefer it to white sandwich bread).
  • We will then partially fill it with whole grain mustard for a subtle kick and with mascarpone. Alternatively, you can use cream cheese (St Morêt, Philadelphia, Mme Loïck, or others).
  • The grilled chicken will provide protein.
  • And the vegetables will add crunch and freshness!

Variety is the Spice of Life

What do you think of this chicken and vegetable sandwich? My 15-year-old loved it and didn’t come rummaging in the fridge an hour after lunch… That’s a great sign!! 😉

You can mix up the ingredients with other vegetables: grated carrots, red cabbage, avocado, mushrooms, bell peppers, and so on…

Utensils Needed to Make This Chicken and Vegetable Sandwich:

– A non-stick frying pan for grilling the sandwiches,
– One pan for grilling the chicken (preferably stainless steel),
– A cutting board,
– One butter knife,
– A good paring knife.

Nothing more!

Honestly, with this chicken and vegetable sandwich, it’s hard to find something simpler when you’re looking for something delicious, “healthy,” and nourishing!

And since I love combining simple and wholesome flavors, this sandwich is a real treat. If you’re seeking more tasty dish ideas, I highly recommend trying my chicken souvlaki or the caramelized pork with sesame, which bring a touch of exoticism to your table. For a comforting meal, the turkey tagine with olives is also an excellent option. Chicken and Vegetable Sandwich

A simple and nourishing chicken and vegetable sandwich, made with whole grain bread, mild condiments, and crunchy vegetables, perfect for a balanced lunchbox or a quick and healthy dinner.

Ingredients

  • 4 thick slices of sandwich bread
  • 1/2 tablespoon of olive oil
  • 1 chicken breast fillet of 200 g
  • 10 g of butter
  • 4 thin slices of coppa
  • 4 lettuce leaves
  • 1 tablespoon of mascarpone
  • 1 teaspoon of old-fashioned mustard
  • 10 slices of cucumber
  • 1 beef heart tomato
  • Salt
  • Pepper

Instructions

Heat the olive oil in a pan over medium heat.

Place 2 slices of bread. Brown both sides. Set aside and repeat with the other 2 slices.

Heat the butter in a pan. Grill the chicken over medium/high heat. Finish cooking over medium heat. Set aside.

Spread two slices of bread with mascarpone.

Spread the other two slices with mustard.

Place the lettuce leaves on the bread with mascarpone.

Cut slices of chicken and place them on the lettuce.

Add the slices of cucumber, then tomato slices.

Salt and pepper.

Close your sandwiches with the bread spread with mustard.
