Hello foodies!

Today, I’m excited to bring a healthy dose of sunshine to your table! Yes, it may be cold and damp where you are, so I have just the remedy: a Chicken Tagine with Preserved Lemon and Olives, courtesy of Casserole & Chocolat!

An Easy Recipe to Make with a Cooking Machine

Don’t worry if you don’t have a cooking machine yet; you can easily adapt this recipe in a Dutch oven. The great advantage of a cooking machine is that it allows for complete and precise control over temperature and cooking times—and it does most of the work for you! You won’t have to stand three feet away from the Dutch oven to continuously stir your dish. With this cooking machine, your Chicken Tagine with Preserved Lemon and Olives will prepare itself!

The Tagine

The tagine is more than just a dish: it is a symbol of conviviality and the art of living in the Maghreb. The name refers to both the culinary preparation and the earthenware dish in which it simmers slowly. The conical lid design retains steam and concentrates aromas, allowing for a gentle cooking method that preserves the tenderness of meats, vegetables, and dried fruits.

This dish embodies the richness of Moroccan culinary traditions, where spices are essential. Cumin, cinnamon, ginger, and saffron blend harmoniously, creating warm and fragrant flavors. The tagine is also a dish meant for sharing: it’s typically placed in the center of the table, often accompanied by bread, fostering a family-oriented and generous atmosphere.

A true sensory journey, the tagine showcases the beautiful balance between simple ingredients and refined flavors.

Back to the Chicken Tagine with Preserved Lemon and Olives

Now, let’s return to our recipe… this Chicken Tagine with Preserved Lemon and Olives is a delight that is both healthy and low in calories. I must admit, as far as I’m concerned, it’s perfect for satisfying my sweet cravings! If you know what I mean! ?

A Note on Preserved Lemons

Preserved lemons are a pantry staple in Mediterranean cuisine, celebrated for their intense and fragrant flavor. They are made by macerating lemons in salt and their own juice, resulting in bold aromas that are both tart and slightly salty. Widely used in Moroccan dishes, particularly tagines, preserved lemons add a unique touch to your cooking.

The tender and flavorful peel is the most commonly used part, enhancing both savory dishes and creative recipes. Preserved lemons pair beautifully with chicken, fish, and vegetables.

Easy to prepare, they allow you to infuse character into your dishes year-round, providing an authentic and flavor-packed culinary experience.

Tips for Perfecting Your Chicken Tagine with Preserved Lemon and Olives

What truly makes the tagine amazing is the quality of your ingredients (particularly the chicken and preserved lemons) as well as the seasoning you choose. I prefer to add the spices before the meat; by sautéing them first in oil with the onions, your spices (such as turmeric, coriander, cumin, and cardamom) will release their aromas even better. When you add the chicken pieces, they’ll soak up all those wonderful flavors…

Spices are always a topic of discussion. Here, we don’t have a sharp or overpowering flavor. In my opinion, it should be balanced… but this is really a personal preference. If you are sensitive to spices, start small. Season lightly, taste, and then adjust to your liking!

What to Serve with Your Chicken Tagine with Preserved Lemon and Olives

Traditionally, you can serve your tagine with couscous or steamed potatoes. You are free to pair this Chicken Tagine with Preserved Lemon and Olives with your choice of vegetables, quinoa, or even some pita bread—why not!
