The Essential Utensils
A stand mixer with whisk,
A baking sheet,
Parchment paper,
A cutting board,
A paring knife,
A piping bag,
A Saint Honoré nozzle for the meringue,
And a round nozzle size 14 or 16 for the whipped cream.

The recipe, Chef!
Mango Pineapple and Lime Pavlova
Ingredients
- Meringue
- 130 g of egg whites (about 4 whites)
- 130 g of granulated sugar
- 130 g of icing sugar
- Chantilly
- 150 g of heavy cream
- 75 g of mascarpone
- 1 tablespoon of icing sugar
- Finishing
- 1 mango
- 1/2 pineapple
- 1 lime
Instructions
Meringue
Start whisking the egg whites. When the mixture becomes frothy, add 1/3 of the sugar.
Whisk again, then add the second third of sugar.
Whisk again and add the last third of sugar.
Whisk like this for about 7-8 minutes.
Add the sifted icing sugar using a spatula.
Preheat your oven to 100 degrees.
Pipe the meringue onto your sheet of parchment paper (I put a bowl in the center to have a guide for making a regular crown).
Bake for 2 hours then cool on a rack.
Chantilly
Whip the cream and when it starts to thicken, add the mascarpone and the icing sugar.
When the chantilly is nice and firm, pipe it onto the meringue.
Finition
Add your fruits according to your liking.
