Here comes another one of my all-time favorite tarts… Yes, another one! 😉
Today, I’m sharing a classic French dessert that deserves a spot on every summer table: the Alsatian Blueberry Tart.

A Taste of Alsace
Why is this one of my favorite tarts? Simple: it instantly takes me back to my childhood.
Because blueberry season is relatively short, this is a truly seasonal dessert. You have to make the most of it while it lasts! With its delicate balance of sweetness and tartness, this blueberry tart is pure joy from the very first bite.
It’s also a traditional dessert from Alsace, in eastern France. If you visit the region at the end of summer, you’ll find blueberry tart on almost every restaurant menu.

A Beloved End-of-Summer Tradition
In Alsace, blueberry tart is one of those recipes people eagerly await each year.
As soon as fresh blueberries appear at farmers’ markets and grocery stores, bakeries begin showcasing them in beautiful homemade tarts. And honestly, one look at a tart packed with plump, juicy berries is enough to understand why it’s so popular.
I love seasonal recipes that only appear for a few weeks each year. It makes them feel even more special. We wait for them, enjoy them, and then count down the months until they return.

Childhood Memories in Every Slice
When I was little, one of my favorite things about blueberry tart was ending up with a blue-purple tongue after eating it!
For some reason, my mother found it much less amusing when my clothes ended up wearing the tart too… 😉
I think that’s why childhood desserts remain so meaningful. A familiar aroma coming from the oven, a warm slice fresh from the pan, or even the color of a fruit can bring back a flood of memories.
For me, blueberry tart belongs firmly in that category. Every time I bake one, I’m transported back to family meals and summer afternoons spent waiting impatiently for a slice.

Choosing the Best Ingredients
The key ingredient, of course, is the blueberries.
Fresh blueberries are highly recommended because frozen berries release a lot of moisture during baking. Excess juice can make the crust soggy and affect both the appearance and texture of the tart.
Before baking, taste your berries. Their natural sweetness varies depending on the season and variety, so this will help you adjust the sugar accordingly.
If fresh blueberries aren’t available, you can absolutely use frozen berries. Simply thaw them completely and pat them dry with paper towels before using them.
An Easy Blueberry Tart Recipe
One of the reasons I love this tart so much is its simplicity.
Just like a traditional Alsatian Apple Tart, you’ll need:
Fresh blueberries
A simple custard made with eggs, cream, and sugar
That’s it!

The Best Crust for Blueberry Tart
I enjoy making this tart with several types of pastry:
- Classic shortcrust pastry
- Sweet pastry dough
- Hazelnut shortcrust pastry
More recently, I tried it with my quick homemade puff pastry, and it was a revelation! The flaky layers add incredible texture and crunch to the finished tart.

A Few Tips Before Serving
Like many fruit tarts, this blueberry tart is best after a short resting period.
Allowing it to cool slightly helps the filling set properly and gives the flavors time to develop. It also makes slicing much cleaner.
If you’re entertaining guests, don’t worry: it’s just as delicious a few hours after baking. In fact, that’s often when I enjoy it the most.

How to Serve Blueberry Tart
For an extra indulgent dessert, serve your blueberry tart with:
A scoop of vanilla ice cream
Homemade custard sauce
A spoonful of thick crème fraîche
Each option pairs beautifully with the sweet-tart flavor of the blueberries.

Blueberry Tart
Ingredients
- 1 pie crust (shortcrust, puff pastry, or sweet shortcrust pastry)
- 400–500 g fresh blueberries
- 2 tablespoons ground almonds
- 2 tablespoons light brown sugar
- 40 g granulated sugar
- 100 ml heavy cream
- 1 large egg
Instructions
Preheat your oven to 400°F (200°C).
Rinse the blueberries and gently pat them dry with paper towels.
Roll out the pastry and line a buttered tart pan with it.
Sprinkle the pastry with the ground almonds, then evenly arrange the blueberries on top. Sprinkle with the light brown sugar and bake for 25 minutes.
Meanwhile, whisk together the egg and the granulated sugar until smooth, but not frothy.
Stir in the heavy cream until fully combined.
After the first 25 minutes of baking, remove the tart from the oven. Carefully pour the cream mixture evenly over the blueberries, then return the tart to the oven and bake for an additional 15 minutes.
Transfer the tart to a wire rack and let it cool before serving.
