Additionally, Indian chefs possess a remarkable talent for blending spices. Cumin, coriander, turmeric, cardamom, ginger… Each dish unfolds a unique story. Honestly, once you start exploring this cuisine, it becomes hard to stop!

However, not everyone’s taste buds are accustomed to such heat, and it can overshadow the joy of tasting. Therefore, I recommend omitting the chili if you’re not used to very spicy dishes. But if you can handle the heat, go right ahead!
My Tips for Your Chutney
As is often the case with very simple recipes, the quality of the ingredients makes all the difference.
I recommend using very fresh herbs and a juicy lemon. The result will be far more aromatic. Also, don’t hesitate to taste your chutney as you go to adjust the acidity or spiciness to your liking.
At my house, this sauce usually disappears quite quickly. Once you start serving it with various dishes, you’ll always find a good reason to have another spoonful!

One cutting board,
A small salad spinner (or a clean cloth),
One citrus juicer,
And a blender.

Indian Herb Chutney
Ingredients
- 20 g of fresh coriander
- 30 g of mint leaves
- 1 clove of garlic
- 2 cm of fresh ginger
- 1 small green chili (optional)
- 1 handful of pine nuts
- 2 tablespoons of lemon juice
- 1 tablespoon of Greek (or Bulgarian) yogurt
- 1/4 teaspoon of salt
- 1/4 teaspoon of sugar
- 1 tablespoon of cold water
Instructions
Wash your mint leaves and fresh coriander stems. (You can use the entire coriander stem.)
Spin (or dry with a clean cloth) your herbs.
Put all the ingredients in your blender.
Blend until you have a smooth texture.
Serve!
