This recipe requires minimal preparation, especially thanks to the slow cooking process that doesn’t need much supervision.

If the aperitif lasts longer than planned, no worries! Your seven-hour leg of lamb can comfortably stay in the oven without the risk of overcooking. Want to get ahead with your preparations? You can even make the leg of lamb a day in advance and gently reheat it in the oven at 212°F (100°C).

It’s truly the kind of recipe I adore when I have guests.

Don’t restrict yourself to preparing this recipe only at Easter; that would be a real shame. It can easily be adapted with seasonal vegetables any time of year—summer, winter, spring, or fall. You’ll be delighted to discover that, regardless of the vegetables you choose, your seven-hour leg of lamb will always be a hit.

In this instance, I made a slightly winter-inspired version, just on the cusp of spring, which features yellow and orange carrots. However, parsnips, zucchini, and eggplants will also create equally delicious combinations.

Ingredients

  • 2 leg of lamb
  • 4 tablespoons of sunflower oil
  • 20 g of butter
  • 1 onion
  • 3 heads of garlic
  • 4 carrots
  • 4 yellow carrots
  • 250 g of pork rind
  • 10 cl of dry white wine
  • 2 tablespoons of tomato paste
  • 1/2 l of chicken (or vegetable) broth
  • Salt
  • Pepper
  • Thyme sprigs

Instructions

Season your leg of lamb on each side.

Brown your legs of lamb in a large pan with butter and sunflower oil.

Set them aside.

Peel and cut all the vegetables into large cubes. Thinly slice the onion.

Sauté the sliced onion in the unwashed pan, with the meat juices.

Then add the carrots. Cook on high heat, stirring for 3-4 minutes.

Preheat your oven to 170 degrees.

Place your pork rind at the bottom of the roasting pan. Put the two legs of lamb on top.

Pour the vegetables around your leg of lamb, add the garlic heads cut in half horizontally.

Deglaze your pan with the wine (pour the wine on high heat and scrape the bottom with a wooden spatula).

Add the tomato paste and the broth.

Pour this juice into the roasting pan. Add the sprig of thyme. Season with salt and pepper.

Put in the oven and cook for one hour.

After this time, lower the oven temperature to 150 degrees. Baste the meat with the juice.

After an hour, lower the oven temperature to 110 degrees. Cook for another 5 hours, basting the meat regularly.
