The Leek and Chicken Quiche

Recipe for the evening, good evening! (Okay, no comments on this introduction!! 😉 )

Mom, what are we having for dinner tonight??? Arghhhh … That question just keeps coming back!!

And here’s what I propose: how about we make a quiche? The quiche with leeks and chicken, of course!!

My leek and chicken quiche, an incredibly simple recipe

It’s true that this recipe takes a bit of time, but mainly because we’re caramelizing the leeks. Plan for about 2 hours (or at least one hour). Two hours to soften them and make them delicious enough for our dear little ones!

You can shorten the cooking time, but don’t go below 30 minutes. It will still taste good, but it will be less caramelized and not as tender…

Other than that, there’s not much work involved—almost none!

I recommend making the crust the day before, washing and chopping the leeks (really, there’s no reason to make this harder than it needs to be), and using some grilled chicken, and then we’re almost done! It’s a great option for weeknight dinners when you want to eat well without spending too much time.

You can easily make variations of this recipe: swap the chicken for bacon, smoked salmon, tuna, or leftover cooked salmon, and it will be delicious! Plus, it’s a great way to avoid food waste…

You have several options for the crust: asavory shortcrust pastry, aquick puff pastry (which is my general choice), or ashortcrust pastry made with olive oil. You’ll find it’s fantastic.

The Leek and Chicken Quiche

Ingredients

  • 1 savory shortcrust pastry (recipe on the blog)
  • 2 beautiful leeks
  • 1 onion (from CĂ©vennes)
  • 1 or 2 chicken fillets
  • 20 g of butter
  • 3 eggs
  • 25 cl of heavy cream
  • Salt
  • Pepper
  • Ground nutmeg

Instructions

Peel and roughly chop your leeks and onion.

Melt half of the butter over medium heat in a Dutch oven and add the leeks and onion.

Cover and let cook over very low heat for 2 hours. Stir occasionally.

Melt the rest of the butter in a pan and grill the chicken fillets with a bit of salt.

After 2 hours, preheat your oven to 220 degrees.

Off the heat, add the cream. Mix.

Then add the eggs and mix well.

Salt, pepper, and add a bit of nutmeg. Finally, add the chicken cut into cubes.

Roll out your dough and place it in your mold.

Pour the mixture in.

Cook for 40 minutes.

Notes

If you have any leftovers, serve the quiche cut into small pieces as an appetizer, it's great!
