Shrimp, Mango and Avocado Tartare

Hello friends,

I’ve got a super easy recipe for you today, and I just know you’re going to love it! Let’s dive into a dish that embodies celebration, freshness, and togetherness.

It’s my shrimp, mango, and avocado tartare.

Choose the Right Ingredients

This tartare is truly a celebration of high-quality ingredients. When you select the right components, there’s no need for fuss. The shrimp offers a delicate briny flavor, the mango adds an exotic, fruity touch, and the avocado contributes a buttery richness.

Together, they create a harmonious trio that shines in both taste and presentation.

I particularly enjoy this preparation method because it highlights the raw freshness of the ingredients.

No complicated cooking or heavy sauces: it’s all about the precision of seasoning and careful cutting. Every bite should strike a balance—neither too sweet, sour, nor rich. This delicate equilibrium is what makes a good tartare so delightful.

The Star of the Tartare: Shrimp

To create a winning shrimp tartare, the choice of shrimp is crucial, as their quality directly affects both the flavor and safety of the dish.

Start by selecting ultra-fresh raw shrimp, ideally from a trusted fishmonger. They should have a light, briny scent, never strong or ammonia-like. The flesh should be firm, shiny, and slightly translucent. If you cannot find fresh raw shrimp, high-quality pre-cooked shrimp can work well as long as they are natural, without any additives or brine.

Opt for wild shrimp or those from sustainable farms, medium to large in size, as they tend to be tastier and more succulent. Avoid small shrimp, which can be bland and watery (and incredibly difficult to peel!).

Finally, be sure to shell and devein them carefully, then serve them quickly after preparation to maintain freshness, texture, and food safety.

The Game-Changing Ingredient

The mango plays an essential role in this dish. It brings warmth, color, and a natural sweetness that beautifully contrasts with the oceanic flavor of the shrimp. It’s important to choose a mango that is ripe yet still firm, so it maintains a pleasant texture without becoming mushy.

The avocado serves as a binder, with its creamy texture softening the overall dish and allowing the flavors to meld together. It envelops the shrimp, tempers the acidity, and delivers that luscious mouthfeel we crave in this type of dish. Again, selecting the right ripeness is key.

My Serving Suggestions

My shrimp tartare with mango and avocado can be served as an elegant starter, presented in a glass for a chic aperitif, or enjoyed as a light dish accompanied by a salad or fresh greens. It’s a versatile recipe that suits any occasion, from a refined dinner to a casual summer lunch. Treat yourself!

For the aperitif, I recommend adding a thin slice of toasted baguette for a delightful crunch. I absolutely love it!

The Origins of Fish and Shellfish Tartares

Tartares have their roots in the evolution of modern European cuisine, influenced by ancient traditions of consuming raw foods. While the term « tartare » originates from steak tartare, popularized in France in the 19th century, the practice of eating raw fish and seafood has existed for much longer, particularly in Japanese, Nordic, and Mediterranean cultures.

From the late 20th century onward, influenced by nouvelle cuisine, French chefs began adapting the concept of tartare to seafood. The aim is to enhance the freshness, texture, and purity of flavors while minimizing transformations.

As a result, fish and shellfish tartares emerged as refined, light, and contemporary dishes, earning a place of prominence in modern gastronomy.
