Marry me Chicken (or Poulet Epouse-moi)
Ingredients
- 2 chicken fillets
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground pepper
- 10 g of butter
- 1/2 tablespoon of olive oil
- 1 shallot finely chopped
- 2 medium garlic cloves chopped
- 1 pinch of red chili flakes
- 1 teaspoon of tomato paste
- 120 ml of chicken broth
- 2 tablespoons of thick cream (or mascarpone)
- 40 g of sun-dried tomatoes in oil well drained and chopped
- 20 g of grated parmesan
- 90 g of young spinach leaves
- A few fresh basil leaves chopped
Instructions
Season both sides of the chicken breasts with salt and black pepper.
Heat the butter and olive oil over medium-high heat in your Dutch oven.
Place the chicken pieces and brown them for 3 minutes on each side.
Set them aside on a large plate (cooking will finish later in the sauce).
In the same Dutch oven, add the shallot, garlic, and chili flakes. Sauté for 1 minute, stirring over medium heat, so that the garlic does not color.
Add the tomato paste and continue cooking, mixing for an additional minute.
Pour in the chicken broth and stir to deglaze the pan, loosening the browned bits at the bottom.
Add the cream, sun-dried tomatoes, and grated Parmesan. Let it cook for 3 to 4 minutes to reduce the sauce.
Stir in the spinach, then add the chicken breasts to the sauce.
Lower the heat to medium-low and let it cook for about 4-5 minutes.
Taste and adjust the seasoning with salt or chili according to your taste.
Sprinkle with basil and add a bit more Parmesan if desired.
