Here is my grilled cheese sandwich with spinach and caramelized onions.

You know, I can’t hide anything from you… This recipe is the result of my reflections on the products of one of my partners: Goyon-Chazeau.

The origin of the grilled cheese
Grilled cheese, the iconic hot and melty sandwich, is a comforting classic of North American cuisine. Its origins date back to the early 20th century, with the introduction of sliced sandwich bread and industrially produced melted cheese—two innovations that revolutionized quick meal preparation. In the 1920s, pasteurized American cheese, invented by James L. Kraft, made the sandwich more accessible and affordable.
Initially, grilled cheese was often made with a single slice of bread filled with cheese and grilled on a griddle. It wasn’t until after World War II that the modern version, consisting of two slices of buttered bread fried to golden perfection, became popular. Served in cafeterias, diners, and homes, it established itself as a symbol of simplicity and comfort.
Today, grilled cheese has gained worldwide popularity and is available in countless variations: brioche bread, aged cheeses, add-ins like tomatoes, ham, or fresh herbs.
And that’s where I come in! 
Let’s return to my spinach and caramelized onion grilled cheese recipe.
I aimed to create a comforting sandwich that was indulgent yet French, and of course, seasonal! With autumn upon us, spinach and onions immediately came to mind!
I prepared an onion compote, which can be made with a splash of red wine, though it’s not essential if you prefer to omit it. I prepared the spinach quite simply, with a quick cook in the microwave. For a delicate flavor and texture, I recommend using baby spinach. However, finely chopped regular spinach will also work well.
On the cheese front, I chose mozzarella from my fridge, but traditional cheddar works perfectly too.
The result: even better than I anticipated! The balance of flavors is incredible; it’s veggie, ultra-indulgent, and truly « fun » to eat. This is a dish you eat with your hands, and it has a presence! 
Which bread to choose for your spinach and caramelized onion grilled cheese?
I opted for a white bread baked in a « loaf » format from my baker. However, don’t feel limited to this option.
To create a delicious grilled cheese, the choice of bread is just as vital as that of cheese. Different types are suitable depending on the desired texture and flavor:
- White sandwich bread is the classic choice! Soft, slightly sweet, and easy to toast, it results in a melty and crispy grilled cheese.
- Sourdough bread with its dense and slightly tangy crumb pairs beautifully with the richness of melted cheese. It’s ideal for a more rustic rendition.
- Whole grain or multigrain bread, rich in fiber and flavor, adds a nourishing touch and a slight crunch.
- Brioche bread, soft and buttery, offers a melt-in-your-mouth texture and subtly sweet flavor, making it perfect for strong cheeses.
- And lastly, country bread, with its thick crust and firm crumb, provides a golden and well-structured sandwich.
Regardless of the bread you choose, generously butter the outer sides before grilling for a golden and crispy crust. This will make it all the more visually appealing!

The necessary utensils:
The P’tit Tradi knife for cutting the mozzarella,
The Grand Tradi for finely slicing the onion,
The Happy Tradi for perfect bread slicing,
A small saucepan,
A bowl,
And a frying pan.

Grilled Cheese Sandwich with Spinach and Caramelized Onions
Ingredients
- Onion
- 1 tablespoon of olive oil
- 10 g of butter
- 2 large yellow onions
- 1/4 teaspoon of sugar
- 1/2 teaspoon of salt
- 3 tablespoons of red wine (optional)
- Spinach
- 120 g of spinach leaves
- 50 g of mascarpone
- 1/4 teaspoon of za'atar
- Salt
- Pepper
- Finish
- 4 slices of bread
- 125 g of mozzarella
- A bit of butter
- 1 sprig of fresh thyme
Instructions
Onion
Heat the oil and butter over medium heat in a saucepan.
Add the peeled and thinly sliced onions.
Add salt and sugar, and cook over low heat and covered for 15 minutes.
After this time, pour in the wine and simmer for another 5 good minutes. If you don't add wine, continue cooking for another 5 minutes.
Spinach
Place your washed spinach in a microwave-safe bowl.
Heat (with a microwave-safe lid) for 2 minutes on maximum power.
Pour into a strainer and press to extract as much water as possible.
Separate the spinach leaves and spread them on paper towels to remove more water.
Place in a bowl with the mascarpone, zaatar, salt, and pepper. Mix.
