The origin of this recipe
As often, I aimed to create something simple, delicious, easy to prepare, and inexpensive. So when De Buyer invited me to make a Christmas appetizer recipe using their rectangular Air System mold, a savory brownie came to mind. Yes, it’s a bit of a novelty; savory brownies aren’t something you encounter every day, but I wanted to give it a go!
Just to be completely transparent, you won’t find the signature elements of my nearly Martha Stewart brownies in this one, your favorites here on the blog. But I’m confident you’ll enjoy the recipe!
I serve my brownie as an appetizer, but it also works wonderfully as a starter alongside a fresh green salad. And beyond the holiday season, this brownie makes for a delightful light dinner on a casual evening.

Yes, we’re making a sweet potato brownie, but it’s not just that; we’ll also incorporate small squares of smoked duck breast and orange zest. Trust me, the combination of these three flavors is absolutely delightful!
To elevate the indulgence even further, and to create a beautiful presentation, we’ll add whole slices of duck breast, a delicate salted whipped cream, and a touch of orange. This dish offers an exciting interplay of textures and flavors, making it perfect for sharing as an appetizer or starter. I’m really proud of this recipe!

The sweet potato, sweet and creamy, forms a warm, subtly sweet base that welcomes the richness of the smoked duck breast. Its woody and salty notes bring depth and contrast. How to check the doneness of the sweet potato
This is a crucial step for your recipe, and it’s where we begin. You absolutely cannot mess this up!
I recommend cooking the sweet potato in the microwave; it’s quick and more energy-efficient compared to a traditional oven! However, microwaves vary in power, so be sure to follow the recommended cooking time and adjust in 30-second increments if needed.
Do keep in mind that if your sweet potato is very thin, it will cook faster.
Storing your savory sweet potato brownie, smoked duck breast, and whipped cream
Since this recipe includes duck breast and whipped cream, you’ll need to keep your brownie in the refrigerator. However, if you complete the final assembly just before serving, feel free to keep the brownie itself at room temperature for up to 24 hours (this can be quite handy for party preparations). Just wrap it in cling film to prevent it from drying out.
You can also freeze your savory sweet potato brownie with the smoked duck breast and whipped cream fully assembled. Simply allow it to thaw slowly in the refrigerator on the day you plan to serve it.
The necessary utensils:
A good whisk,
A mixing bowl,
A small angled spatula,
A perforated rectangular stainless steel mold,
A paring knife,
A piping bag,
And a 15mm serrated nozzle.

Savory Sweet Potato Brownie, Smoked Duck and Whipped Cream
Ingredients
- 1 sweet potato
- 3 eggs
- 10 cl of olive oil
- 185 g of flour T45 or T55
- 1 packet of baking powder
- 1/4 teaspoon of nutmeg
- 1/2 teaspoon of ground cumin
- 1/2 orange
- Salt
- Pepper
- 20 slices of smoked duck breast
- 120 g of cream
- 120 g of mascarpone
Instructions
Brownie
Prick your sweet potato all over with a fork.
Put it in the microwave covered with a lid. Cook for 6 to 8 minutes at maximum power.
Check the cooking with a knife.
Retrieve 230 g of flesh. Let it cool a bit.
Preheat your oven to 180 degrees.
Mash the sweet potato with a fork. Add the 3 eggs and mix.
Incorporate the oil gradually.
Then add the flour and baking powder. Mix well.
Finally, add salt, pepper, spices, and the zest of the half orange. Mix.
Pour into your previously buttered mold.
Cook for 20 minutes.
Let cool on a rack.
Assembly
Put the cream and mascarpone in your "cul-de-poule" bowl and whisk until you have a firm texture.
Pepper (you can also add cumin), mix gently and put into the piping bag with the fluted nozzle.
Refrigerate.
Cut your brownie into slices.
Pipe a small amount of whipped cream on each slice, then place a slice of smoked duck breast on top.
Then pipe a generous amount of whipped cream.
Add 1/8 of a slice of orange and serve!
